Master Chef Marco Mattolini is a native of Florence, Italy. He spent several years traveling and cooking his way through Europe. While in Europe, Marco enjoyed the opportunity of cooking for several noted dignitaries. He came to the US in 1984, where he spent five years working on the East coast with several restaurant developers, including the famous entrepreneur Donald Trump. Marco originally came to Corpus in 1989 and opened several restaurants, including the acclaimed Marco's at Lamar Park. Marco returned to Italy in 2000, and while there, opened Lo Scalino, a restaurant on the southern coast of Tuscany, which received a rating of "Two Forks" in the noted Michelin Travel Guide to Italy. His favorite customer was the King of Spain.

In 2005, Chef Marco formed Marco & Co. Catering, LLC, member of the Rockport-Fulton Chamber of Commerce and Port Aransas Chamber of Commerce. Preferred Caterer of the Texas State Aquarium and the Historic Fulton Mansion. Chef Marco also opened Marco's Lunch Club and happily resumed serving the finest food to the Coastal Bend.
